Seem Pal /Theratti pal

 Seem Pal /Theratti pal :

Hi guys, days are going hectic these days, literally finding free time is so much difficult to squeeze in some time for blogging. I've made this seem pal (months back), also happens to be one of my childhood fav, still it is, as there were many cows in my maternal grandma's place and so we have gotten many chances to indulge this sweet, not only that, there is a big cattle located in parallel to our lane in my home town, what they will do is, they would distribute the colostrum to the house where they see small kids, growing kids on a regular basis.

So I had this plenty while growing up, but it wasn't the same after I got married. Yes, I've moved to lead a city life then to a different country, I should say, am fortunate to get this milk in KL, as my milk vendor is so kind enough to share this with no questions asked.. I like it pretty dry version of seem pal, if u want it with whey , look for the consistency in the pic and stop the cooking when the milk has reached the corresponding stage.

Ingredients:
  1. Cow's first milk (Colostrum)  1 L
  2. Jaggery 1/3 cup, add acc to taste
  3. Salt a pinch
 Instructions:
  • Pour the milk on a non stick wide bottomed pan and heat on a medium flame stirring continuously.
  • After a few minutes the milk would start to curdle just as like in the pic.
  • Keep stirring the milk until the milk has curdled and add the jaggery at this stage.
  • Keep on stirring until the jaggery dissolves and the colour would change to the colour of the jaggery.
  • Continue stirring the milk until all the water is evaporated and turned dry as the process goes on.
  • Switch off the stove at any point after adding adding the jaggery since many likes it with whey but we like the drier version more. To get this consistency, you need to stir more, may be for 5 to 7 minutes more on a medium flame and once it's dry, switch off and let it cool for sometime before storing in an air tight container. Better store in refrigerator for longer shelf life.
