 Chicken fry with Indian herbs and spices :




Chicken fry is an absolute favourite of my family's bread winner, if u know me , I'm not a crazy chicken lover. So very often I would try something new with chicken, this time, I've tried the chicken fry using mint and coriander leaves. It tastes very delicious ,believe me, though the recipe might seem a bit long, it really isn't. Just pound the masala if u have the mortar n pestle , really gives the dish an authentic flavour, if not just grind in mixie as if u've pounded, marinate, then fry it. It's just that simple. It was really good, goes great with sambar rice , curd rice or simply with roti's. Try this and let me know..

Ingredients:

To make a paste :
  1. Mint leaves - 1/2 cup
  2. Coriander leaves - 1/2 cup
  3. Green chilly - 1 no.
  4. Fennel seeds - 1/2 tsp
  5. Shallots - 5 nos.
  6. Ginger - a small piece
  7. Garlic - 5 pods

For marination :
  1. Chicken - 1/2 kg, cleaned n pat dry
  2. Herb paste from the above mentioned recipe 
  3. Salt - to taste
  4. Turmeric powder - a pinch 
  5. Lemon juice - 1 spoon
  6. Oil - 1/4 tsp

For masala:
  1. Oil - 3 tbsp
  2. Cinnamon - 1 " piece
  3. Cloves - 2 nos.
  4. Cardamom - 2 nos.
  5. Red chilli powder - 1/2 tsp
  6. Turmeric powder - a pinch
  7. Garam masala powder - 1/4 tsp
  8. Salt - a pinch
  9. Curry leaves - a sprig
  10. Water -as needed

Method:

Marination:
  • In a mixer jar add the ginger, garlic, fennel seeds and grind to a coarse paste adding very little water, like a tsp of water. Next add in the mint leaves, coriander leaves and give it a whip. Next add in the shallots, green chilly and again whip for 2 times. Now the paste should resemble like a pounded masala.
  • Now throw in the ground herb masala to a small bowl and add the turmeric powder, oil , lemon juice, salt required for the chicken. Mix the paste well. Add in the chicken pieces to the masala and coat the chicken pieces with enough masala. Cover the bowl and refrigerate to marinate for minimum 2 hrs.

Preparation:
  • Heat a heavy bottomed pan with 3 tbsp of oil. Add in the marinated chicken pieces along with all the masala, Stir the chicken for 2 to 3 times. Cover and cook the chicken for 4 minutes on medium low flame.

  • By now the masala would have been sauteed well. Now add the turmeric powder, red chilli powder, curry leaves ,salt ( make sure to add very less as the marinated chicken already has enough salt) 
  • Combine well and sprinkle some water needed for the chicken to get cooked. Cover and cook the masala for 8 minutes stirring every 2 minutes on medium low flame. Checker whether the chicken has cooked to perfection, if not, add little more water and cook for the required time.
  •  Now the fry should be dry, better keep on stirring and add the garam masala powder, mix well. Simmer the chicken for a minute and serve hot.
