Baked Macaroni and Cheese

Baked Macaroni n Cheese:

 Barely adapted from Alton Brown

  1. Pasta - 1/2 pound
  2. Butter - 3 tbsp
  3. All purpose flour - 3 tbsp
  4. Mustard powder - 1 tbsp
  5. Milk - 3 cups
  6. Onion - 1/2 cup, chopped, preferably yellow onion
  7. Bay leaves - 1 no.
  8. Paprika - 1/2 tsp, or to taste
  9. Cheddar cheese - 1 1/2 cup, shredded
  10. Salt - to taste
  11. Pepper - crushed, around 1/4 tsp
For topping:
  1. Bread crumbs - 1 cup,
  2. Butter - 1 tbsp
  3. Italian herbs - 1 tsp
  4. Garlic clove - 2 no. minced
  5. Salt - to taste
  6. Parmesan cheese - 3 tbsp

  • Preheat oven to 350 deg F.
  • Boil a large pot of water with salt , oil and cook the pasta to al dente (acc to ur preference)
  • While the pasta is cooking, heat another pan with butter, whisk in the flour, mustard powder and stir together for 4 to 5 minutes. Stir in the onion, bay leaf and scald well for 2 minutes.
  • Pour in the milk and stir together until it is free of lumps and saucy. Throw in the paprika, mix well. Simmer for 10 minutes. Remove the bay leaf if you want to.
  • Stir in 3/4 of the cheese. Combine well , add the required salt and pepper. Dump in the cooked pasta and combine thoroughly. Pour the mac n cheese into oven proof dish.

For Topping:

  • Melt the butte separately in a pan and fry the minced garlic, throw in the Italian herbs,salt, bread crumbs and toss them together until it is combined.
  • Switch off the heat. Add the Parmesan cheese to it and combine thoroughly.
  • Top the macaroni n cheese with the seasoned bread crumbs . Bake for 30 minutes.
  • Remove from oven and serve warm.
