Vellam puttu for Navarathri

My advance Navrathri wishes buddies. I know it's bit early to say this but with all attention to my health I don't think I can post this anytime in Navarathri for sure. Yes, I've been diagnosed with Arthritis in my neck and also having some pain issues on my shoulder blades which is due to the nerves. So am on pills and attending physiotherapy sessions on a regular basis nowadays. So, it's almost next to impossible for me to blog either. 

The pics am gonna post was taken last year and also the recipe from my neighbor as well. The shots were also from their Golu only. Hope u guys njoy..


Rice flour -- 1 cup
Water -- 1 cup
Turmeric powduper-- a pinch
Pacha karpooram  -- a pinch,optional
Salt -- a pinch

For garnishing :
Ghee -- 1 tbsp
Cashews-- 1tbsp
Shredded coconut-- 1/4 cup
Cardamom powder--1/8 tsp

For syrup:
Jaggery, powdered -- 1 cup
Water -- 3 tbsp

  • Dry roast the rice flour on a medium flame until  the colour changes from pure white to medium brown in colour.Remove the pan from the heat.
  • Add a pinch of  salt + turmeric powder (may be more pinches) in one cup water and heat for a minute.
  • Slowly pour in the hot water and mix with the roasted rice flour. The rice flour should be as such when making a ball it should hold its shape and when broken it should disintegrate. i.e. it should be able to hold a shape and also crumbles when pressed.
  • Place this wet flour in a thin clean cloth (like a kitchen cotton cloth) and tie it loosely as the quantity would be more when cooked. Place in this pouch on the idli plates and keep it inside the idli maker, Cook for 45 minutes. Once it's cooked remove the pouch from the idli maker and let it cool for 10 to 12 mins.
  • Meanwhile prepare the jaggery syrup by adding water just enough to cover the powdered jaggery and boil them on a medium flame.
  • Filter the jaggery syrup once the jaggery completely dissolves and pour it back , boil again.
  • Bring the syrup to a soft ball stage i.e. Add a drop of syrup in the  cool tap water . After pouring, the syrup should not dissolve instead u should be able to form a soft ball out of it. 
  • Remove the syrup from the heat. Untie the pouch and take out the cooked puttu and add it to the hot syrup. Cover the puttu and let it sit for 2 mins undisturbed.
  • Now with the back of the spoon try to crumble ( while it's warm) all the thick lumps of puttu to powdered form. Keep repeating the procedure until u r done with all the big lumps and ended up nothing but fine puttu.
  • Heat a pan with a tbsp of ghee and fry the cashews to golden in colour. Now add the cardamom powder and fry as well. Add the shredded coconut and fry them for a minute. Transfer the ghee mixture to the puttu and mix well. Store the puttu in an airtight container and take as needed. Be sure to use clean , dry spoon every time u open it. 

  • Roasting the coconut in ghee is optional. U may add as such. But roasting gives longer shelf life. U may also omit coconut.
  • Add the edible camphor to the puttu along with the ghee mixture n mix thoroughly.
  • Cooking the rice flour for 45 minutes is a must. Don't compromise on the timings.
  • Puttu flour can also be used instead of rice flour which gives more soft puttu.
  • Store in refrigerator for long term use.
