Pineapple upside down cake

I know, this is not how exactly an upside down cake would look like, but believe me the cake was perfect and delicious. I had to throw in the pineapple slices in place of arranging it neatly, am sorry I had to, as I was holding and consoling my son in one hand, left with one to get the batter into the oven. It happens, when  U've a baby or a toddler around u 24/7. I know some might think, it's yummy and some not. It turned out one of the best cakes I've ever baked as u see, the recipe includes almost everything a cake needs to be tasty and yeah, forgot about mentioning caramelized slowly baked pineapple slices..those are to die for. All in all it was yummy. I'll treasure this recipe forever.

Ingredients :
Adapted from

Caramelized brown sugar topping:
1 cup of firmly packed brown sugar
1/2 cup unsalted butter
1 can pineapple slices/fresh pineapple cut into rings

For the cake:
1 1/2 cups All purpose flour
6 tbsp cake flour
6 tbsp of ground almonds(fine powdered from 2oz of whole almonds)
3/4 tsp baking powder
1/2 tsp salt
3/4 tsp vanilla extract
1 3/4 cups sugar
4 large eggs
3/4 cup milk (replaced milk for sour cream)

Conversion : For 1 cup of cake flour (240ml) (120gms) => 3/4 cup APF (100gms) (180ml)+ 2 tbsp(20gms)cornstarch,packed.

Method :
  • First make the topping by melting the butter and the brown in a heavy bottomed pan on medium heat until the brown sugar melts and turns bubbly. This will take several minutes to reach this stage.The author stated not to stir the mixture, once the sugar dissolves. Pour the syrup into the (already greased n lined with wax paper ,again greased on top) pan and arrange the pineapple slices on top of the syrup in a single layer.
  • Preheat the oven to 375deg F. Mix the all purpose flour,cake flour,almond flour,baking powder,salt and combine well.
  • Cream the butter and sugar in a electric mixer until light and fluffy. Add eggs one by one and beat after each addition of eggs to blend them thoroughly.
  • Add in the vanilla extract and beat.Add the dry ingredients alternately with milk until u finish off with the flour and the milk, ensure beating after each round of ingredients thrown.
  • Pour the cake over the pineapple slices and level it.
  • Bake the cake for 55 minutes to 1 hr 10 minutes(depends on ur oven, mine took exactly 60 minutes to get done) or to a time period till the toothpick when inserted comes clean out.
  • Immediately place a heatproof plate over the top of the baking pan and invert the cake upside down ,leave the pan @ this stage for 5 minutes so that the brown sugar topping could drizzle all over the cake and tastes extremely delicious. Serve the cake @ warm/room temperature.

Notes/Suggestions :
  • This cake is very dense and fortunately I'd already halved the recipe and it was enough for a small family. 
  • Also reduced the quantity of butter to some extent where I don't feel guilty while I enjoy my share of slice.
  • Also reduced adding some sugar (for 3/4 cup+2tbsp of sugar, I've added 1/2 cup+1 tbsp) but it was perfect, adding the exact amount of sugar might have turned very sweet.
  • Also added 1/3 cup of brown sugar +2 tbsp of butter to make the caramel topping.
  • Replaced sour cream with the equal amount of milk and satisfied with the texture.
