Garlic Rolls/Buns

I love garlic bread and am an ardent fan of Texas Toast. We always stock them in our freezer. As a garlic lover, I should have tried this buns/ rolls before, Yes, I tried once from the Raks Kitchen and pretty happy with it , but only the buns. This time I wanted to give a try both buns n rolls together as the dough required for both is the same. Basically, I've used a pizza dough which I referred from food network star Tyler Florence  and much satisfied with the result. Njoy !!!


Ingredients :

Pizza Dough : ( For Rolls/Buns)
  • 1 package active dry yeast
  • 1 tsp sugar
  • 1 cup + 1 tbsp warm water (100 to 110 degrees F.)
  • 1/2 tsp Salt (acc to taste)
  • 3 cups unbleached all-purpose flour, plus more for dusting 
  • 1 tbsp extra-virgin olive oil, plus extra for bowl
Method : 
  • In a small bowl, combine the yeast,sugar ,salt and the warm water. Mix well and sit for 5 to 10 mts to let the yeast foam.
  • Take the flour in a big bowl and make a well in the center. Add the olive oil and the yeast mixture in the well and mix along with the flour. Make a soft and pliable dough( not so sticky ) and work on the dough for minimum 5 minutes.
  • Apply olive oil on the top of the dough and on the sides of the bowl sparingly and cover with a plastic wrap / moist muslin cloth and let sit in the warm place for the dough to get raised.Do not disturb the settings for 1 hour.
  • Later ,it should have doubled the volume and now start punching the dough so that all the air goes out. Again make a round ball and apply some oil on the top as well as the sides. Again cover and sit for 30 minutes.
  • Punch the dough again and divide the dough into two equal portions, one for rolls and the other for buns. 
 





For stuffing : 
  • 2 tbsp, garlic , finely minced
  • 4 tbsp Butter, at room temperature
  • 1 tbsp Olive oil
  • 1 1/2 tbsp parsley, basil leaves, finely minced ,else, coriander leaves.
Method :
  • Mix everything together and make a fine paste.
 





For making Buns :
  • Preheat the oven at 375deg F
  • Squeeze a small amount of dough together  between ur thumb and fingers. U may get a nice round ball. Place this balls on the tray lined with aluminium foil / parchment paper /greased cookie sheet.
  • Slightly pat the balls and make a tiny cross slit on the top ( I forgot to pat the balls). Place a little stuffing on the slits and bake them for 25 to 30 mts.( Ovens may vary !! )
 



For making Rolls :
  • Preheat the oven at 375 deg F .Grease the loaf pan with olive oil ( including the sides ) and keep it ready.
  • Dust the working area with enough flour and start rolling the dough to a slightly thicker side (evenly). paste the stuffing on the top thoroughly everywhere and roll out till u reach the end.
  • Cut the roll into equal halves and again cut the halves into equal parts.
  • Place the rolls in the pan one by one and bake for 25 to 30 mts.
