Butter Beans Pulao

Ingredients :

Butter beans -- 1 cup ,soaked & cooked
Basmati rice -- 2 cups
Onion -- 1 no., Julienned
Tomato --1/2 no. , chopped
Mint leaves -- a handful
Coriander leaves -- a handful
Garam masala powder -- 1/4 tsp
Oil -- 2 tbsp
Fennel seeds --  1 tsp
Salt -- to taste
Turmeric powder -- a big pinch

To grind :

Coconut -- 2 tbsp
Dry red chillies -- 2 nos.
Green chilly -- 1 no.
Onion -- 1/3 cup , chopped
Fennel seeds -- 1/2 tsp
Ginger -- 1/4 in piece
Garlic -- 4 nos, peeled

Method :
  • Soak the basmati rice for 30 minutes . Soak the butter beans ( I used dried beans ) overnite and pressure cook till al dente / until firm. Took me 1 whistle.
  • Grind the ingredients given in the seperate table (except coconut )to a fine paste and atlast add the shredded coconut and grind it little coarsely and keep aside.
  • Heat a kadai with the oil and do the seasoning with the fennel seeeds . Stir in the chopped onions + salt and scald well until it turns glossy and golden . Now add the wet masala paste and combine well. Add the turmeric powder as well. Mix well and cover the kadai. Continue cooking the masala in medium low heat for another 5 minutes , till u get of the raw smell of the masala and the oil leaves the sides.
  • Add the mint leaves and the coriander leaves and mix well with the masala. Now add the cooked butter beans and combine well.
  • After a minute , throw in the soaked rice and stir gently in the masala without breaking the rice. Add the tomatoes and garam masala at this stage and mix well. ( I like to add tomatoes atlast) Add 3 cups of water  and mix  everything well. Check for the salt and adjust acc to taste.
  • Cover and cook for10 minutes / until the rice gets cooked. Open the lid and use a fork to dig in to mix well.
  • Serve with raita n Njoy !!!

Notes :
  • Adding mint leaves is a must.
  • U amy add the tomatoes in the beginning itself like u do for any other pulao / biriyani.
  • This pulao  taste  exactly like biriyani..
