Panner Stuffed Cauliflower Kofta Curry

I's so impressed when first saw the kofta recipe in Raks kitchen .. well, amazed @ the stuffing inside the kofta.. Atlast, made it 2 weeks back.. It was so yummy , I gobbled many of those without making it to the gravy.. It was YUM..  To mention, I've changed some of the ingredients and totally it's a different gravy from her's.. Since my H doesn't like tomato gravy , I couldn't opt for her recipe. So I kinda stuck with my normal gravy .. And ofcourse , I went for paneer instead of cheese for the stuffing part..

Ingredients :

For Kofta :

Cauliflower -- 2 cups ,Grated
Potatoes -- 3 nos. , boiled and smashed
Corn flour -- 2 tbsp
Garam masla -- 1/4 tsp
Red chilli powder -- 1/4 tsp
Chaat masala -- a pinch
Baking powder -- a pinch
Salt -- to taste
Oil -- to deep fry
Paneer -- chopped into mini cubes

For Curry :

Onion -- 1 no , chopped into cubes
Tomatoes -- 2 nos, Blanched and pureed
Milk -- 1 cup
Heavy cream -- 1/4 cup
Honey -- 1 tsp
Bay leaves -- 1 leaf
Cloves -- 2 nos.
Cumin seeds -- 1/2 tsp
GG paste -- 1/2 tsp
Red chilli powder -- 1/4 tsp
Coriander powder -- 2 tsp
Salt -- to taste

Method :

Heat a tsp of oil and fry the grated cauliflower.  Fry for 4 to 5 minutes , by now, the milky white colour of the gobi will turn to  cream colour.. Combine the mashed potatoes, cooked / pan fried cauliflower, chaat masla , salt, red chilli powder,corn flour ..everything together except paneer and blend well. ( ADD HALF THE SALT AS THE CHAAT MASLA HAS SOME SALT ALREADY ) Make a dough. Do not overwork the dough.



Now make small balls and place the paneer cube inside and seal it completely and form a small ball.  Deep fry the  gobi balls in medium hot oil until it turns golden brwon ..( I overdid this part, so turned dark brown..)


Place this in a kitchen towel / tissue to drain the excess oil ..

Now comes the gravy part :

Fry the onions in oil for a minute and grind it finely .. Now in the same pot, heat the oil and do the seasoning. Throw in the cumin seeds , bay leaves and the cloves . Fry . Add the GG paste and fry until it starts sticking to the bottom. Then dump in the pureed onions and scald well for 2 minutes. Now add the pureed tomatoes and mix well with the masala.  Cover and continue to cook for another 3 minut es or until u get rid of the raw smell.  Next add in the red chiili powder, coriander powder and the salt . Blend well.  Again cover the pot and cook it for another 2  minutes. Now pour in th eheavy cream and the milk and mix well over medium low heat .. Leave this mixture for 1 or 2 minute. Finally add the honey and combine well. Switch off and ADD the KOFTAS WHEN u r ready to SERVE and garnish with coriander leaves..
