Am sure masla mushrooms will be everyone's fav esp for mushroom lovers. I had a big box of mushroom left without being noticed by the way , in my fridge . Finally ,it caught my eye when I's looking for some space for an another entry in my refrigerator..OOh..Seriously, it's a tough job u know.. I've already posted some of the mushroom recipes, so this time , masala mushrooms popped in my mind and here they are ..
Mushrooms -- 8 0z packet
Bay leaf -- 1 no.
Cinnamon -- 1 inch piece
Cardamom -- 1 no.
Cloves -- 1 no. .... Instead , u may add half a tsp of Garam masala powder
Onion -- very finely chopped -- 1 1/2 cups
Tomato --very finely chopped -- 1 cup
Salt -- to taste
Oil --2 tbsp
Red chilli powder -- 1/2 tsp
Turmeric powder -- less than 1/4 tsp
Cumin seeds -- 1/4 tsp
Cumin powder -- 1/4 tsp
Garlic -- minced -- 1 tbsp
Coriander leaves -- handful
Clean the mushroom and chop into big chunks. Take a wide bottomed pan and add the oil. Add the bay leaf,cinnamon,cardamom,cloves one by one ( or simply garam masala powder )and start seasoning them. Add the cumin seeds and fry them as well. Followed by finely chopped onions and minced garlic. Scald the mushrooms very well in the oil for 2 minutes. Then dump in the tomatoes and combine well. Cover it and cook the mixture until the tomatoes totally cooked and turns a solid mass. Now dump in the dry powders one by one including salt and mix well. (turmeric,redc hilli powder and cumin powder ..u may omit the cumin powder if u want ).. Fry this mixture for a minute and drop all the chopped chunky mushrooms and scald well in the masala. Keep the flame in medium low. Leave the pan for few minutes so that the mushrooms starts getting wilted a little and oozing out water. Just combine and stir the mixture every one minute. The mushrooms take utmost 5 minutes to cook. So keep an eye on the masala for not getting burnt.. Switch off the flame once u cross the five minute slot.. and garnish with corainder leaves and serve hot hot..
