This is such a comfort food and moreover u don't have to stand there in ur kitchen and slave for a long time. This needs no intro , i think..
Vermicelli -- 1 cup
Water -- 1 + 1/2 cups
Veggies of ur choice -- 3/4 cup
I've added -- Mushrooms, beans, Peas
Onions --chopped --1/2
Tomatoes -- chopped --1/2
Green chilly-- slit open -- 1 no.
GG paste -- 1 tsp (optional)
cardamom,cinnamon,Cloves -- each 2 nos.
Turmeric powder -- 1/4 tsp
Red chilli powder -- 1/2 tsp
Coriander leaves -- 1/4 cup
Oil -- as needed
Salt -- to taste
cumin seeds --1/2 tsp
Dry roast the vermicelli for 2 minutes or until it turns light golden brown. Keep it aside. Take a wide pan and pour little bit of oil. Add the cinnamon,cloves and cardamom when the oil is hot and let them splutter. Then add the cumin seeds and fry for 5 sec. Add the onions ,green chilly and saute well for few minutes. U may add GG paste exactly this stage and let them fry for few minutes. Add the tomatoes and cook till it almost got mashed. Add all the veggie's and saute them for 5 minutes.. sauteeing the veggie's makes them cook half way thro' the process.Throw in the turmeric powder,red chiilipowder and salt and scald well. Cook this masala till the oil starts oozing out. Now add one and half cups of water ,mix it well. This will take no time to boil. So add the rosated vermicelli and the coriander leaves when the mixture started boiling. Combine well and cook till it's done.
Note : I've added 2 cups of water since we like this way , For us, it has to be sticky... :)
