I still remember my good old college days carrying tomato rice, pulao, idli ,variety rice in my small tiffin box left me nothing to eat for my lunch cos of the food traffic and fights in between my friends who were hostelers .sighs !!! I've always liked my friend mugi's hostel idli's. She used to carry an extra box of idli for me.. I've also carried an extra box of tomato rice for her..She always say that my mom makes every dish better than the best .. so, from my family to ur's...here goes
Basmati rice -- 2 cups (1 cup = 125 ml)
Onion -- sliced thin -- 1/2
Tomato puree -- from 2 medium tomatoes (do not add water)
Cardamom --1 no.
Cloves -- 2 nos.
Cinnamon -- 1 inch piece
Garlic cloves -- thinly sliced -- 3 nos.
Green chilly -- 2 nos. (slit open)
Red chilly powder -- 1/4 tsp
Mint leaves -- handful (must !!!)
Coriander leaves -- handful
Coconut milk -- 2 cups (1 cup = 125 ml) ( i used readymake MAGGI coconut milk powder mix)
Salt -- to taste
Oil -- as reqd
Slice /chop the ingredients to be done. Soak the basmati rice for exactly 10 mts.Heat a kadai, and add little bit of oil . when it's hot add the cinnamon, cloves,cardamom and fry for 30 secs. Throw in the onions,garlic,green chillies one by one and scald well for a minute. Ther's NO NEED to add GINGER GARLIC PASTE for this dish. Trust me, it works. Add the mint leaves and coriander leaves now and combine. Immediately pour in the tomato puree and start stirring for a minute. Now add the red chilly powder and the salt. Combine well. Now wash the rice and add in the electric cooker. Transfer the tomato pulao masala as well into the electric cooker. Add the coconut milk. DO not add extra water as the pulao masala will be watery and that might equals 3/4 cup. ( 2 cups coconut milk + 3/4 cup watery masala is more than enough to cook the rice). Plug in and cook till it comes to warm mode. Switch it off once it immediately reaches warm mode. Raita is a very perfect condiment to this dish.. Seriously, it exactly tasted like biryani...It turned out perfect...
