Idli sambar / Vegetable Sambar

This is totally my mom's recipe. U know what, this is finger-licking -good sambar specially meant for Idli's, Pongal.,Vada ..for breakfast/tiffin version ..Hope u all njoy like i do ..

Here goes the recipe :

Ingredients :

All chopped :

Carrots -- 1/4 cup
Beans -- 1/4 cup
Drumstick -- 1/4 cup
Okra -- 1/4 cup
Chayote /chow chow -- 1/4 cup

If u want to add any more veggie's u r most welcome..

Thuvar dhal -- 1/2 cup
Turmeric powder -- 1/4 tsp
Coriander Powder -- 3 tsp
Salt -- acc to taste
Hing -- 1/4 tsp
Garlic clove -- 2 no.
Thick Tamarind paste -- 2 tsp
Green chilly -- slit open -- 4  no.
rice flour -- 1 tbsp
besan flour -- 1tbsp
Water -- 4 cups

For tempering :

Oil -- 2 tbsp
Mustad seeds -- 1 tsp
Cumin seeds -- 1 tsp
shallots -- chopped -- 2 no.
Curry leaves --1 sprig

Method :

U can make this in a simpler way by using pressure cooker and thatz what i do. Take a pressure cooker and add the cleaned dhal, all the veggies, Hing, water ,garlic clove ,green chilly ,dump everything and cook till the dhal gets cooked. May be u can keep it for 4 whistles. Mix the besan flour and rice flour with little bit of water and keep it seperately. Open the cooker and add the tamarind paste and give ita boil. U may dump the turmeric powder and corainder powder and again boil for 3 more minutes. Finally add the rice flour,besan flour mixture into the sambar and slowly stir it. Last thing left to dod is tempering. Add the oil ina small pan & heat it. Add the mustard seeds,cumin seeds and curry leaves. Fry until it pops up.Start adding the onions and scald well. Transfer this thadka into the sambar and combine well. Garnish it with cilantro and serve.
