Gobi 65 -- Restaurant style

Ingredients :

Cauliflower -- one big head (almost 1/2kg)
Rice flour -- 3 tbsp
Corn flour -- 1/2 cup + 2 tbsp
Curd/Yogurt -- 1 1/2 tbsp
Red chilly powder -- 1/2 tsp
Turmeric powder -- 1/4 tsp
Soy sauce -- 1 tsp(optional)
Salt -- to taste
Colour powder -- a pinch
GG paste -- 2 tsp

Oil -- to deep fry

For Masala :
Onion -- very finely chopped -- 1/4
Capsicum /Bell pepper -- thickly sliced -- 1/2
Ginger -- julienne -- 1 tbsp
Tomato sauce -- 1/4 tsp
Sriracha sauce -- 2 drops or to taste
Soy sauce -- 1/2 tsp
Salt -- to taste

Method :

  • Cut the cauliflower into small florets.
  • Boil a pot filled with halfway of water and give it a boil n switch off.Add the gobi florets and cover it for 10 minutes.Drain the florets and let it dry on a tissue towel for 1/2 hr.
  • Add the corn flour,rice flour,GG paste,salt,colour powder,yoghurt and add the dried florets as well. Mix everything well without adding water and deep fry in the hot oil..( oil should be very hot)

But in restaurants, they add some extra ingredients..

Take a wok or something which has abundant space, and add little bit of oil. Fry the onions until it turns translucent and then add ginger. Saute for 30 seconds more a,d throw in all the sauces one by one. Keep the flame in medium low as we don wanna burn it. Add salt just enough to taste masala.. Finally add the deep fried florets and give them a good toss so that the masala coats everywhere.. and finally u may have a hot ,drool worthy GOBI  65
