Adai

This dish is one of my mom's specialty and i love to eat it hot straight right from the tava. Actual combination would be Adai and Avial . But we used to have it with coconut chutney and idli podi. I would say thatz a good combination too. This is how i make adai and hope everyone does the same.. Din't find time to make chutney also and my H was bit upset bcos of not making chutney and moreover he doesn't like adai @ all. He says it's loaded with dhals..So i very rarely make this dish..I would say 2 times in a year .. :(

Ingredients :
Idli rice -- 1 cup
Raw rice -- 1/4 cup
Bengal gram --1/4 cup
Moong dhal -- 2 tbsp
Thuvar dhal -- 1/3 cup
Urad dal -- 1 tbsp
Dry red chilly -- 4 to 6 nos.
Saunf /Fennel seeds -- 3/4 tsp

Garlic -- 3 pods,crushed
Ginger - a small piece
Shredded Coconut -- handful
Curry leaves -- 2 sprigs
Coriander leaves --chopped -- 2 tbsp
Salt -- to taste
Turmeric powder -- a pinch
Hing -- a dash
Onion --finely chopped -- 1/2 cup

Method :

Soak all the dhals with rice for minimum an hour or so. Soak the red chilly and saunf seperately for 10 minutes. Grind all this together with ginger and coconut to a slightly coarse paste like a dosa batter consistency. Transfer this to a wide vessel and add turmeric powder,salt and mix well.Crush the garlic pods, and add this to the batter. Drop in the hing and combine well. Add the curry leaves by breaking down into pieces.  Add the coriander leaves too. U may saute the onions for a minute for those who can't stand the smell of it. and add to the batter .Or otherwise simply add the onions . Combine well.  Heat a dosa pan and take a laddle ?(or 2 ) of batter and make a medium circle of Adai. Pour the oil on the sides to make it crispy.



 Flip it and cook for 30 seconds. Make sure to adjust the flame in between otherwise u'll end up  having hard time..
