Last sunday we went to Madras pavilion for lunch, there were so many items eye-catching, out of all kootu was good. But i just had a spoonful bcos my baby started his tantrums.. so couldn't njoy over there. I thought of making this kootu today to cover up that longing desire.. N it's turned out fantastic..
Carrot -- 1 no.
Cabbage --  chopped into dice -- 1 cup
Beans -- 1 1/2 cup
cauliflower florets -- 1 cups
Tomato -- chopped -- 1/4th of afull one
Hing -- 1/4 tsp
Moong dhal -- 1 1/2 cup
salt -- aac to taste
To grind:
Coconut -- 3 tbsp
Cumin seeds -- 3/4 tsp
Green chilly -- 3 no.
For tempering:
Mustard seeds -- 1 tsp
Curry leaves -- 1 sprig
urad dhal -- 1 tsp
oil-- 2tsp
Method :
Soak the dhal for 10 minutes . Actually u can do the whole process in a pressure cooker but i used a stock pot to get the kootu done. Place the dhal in the stock pot and add a cup of water .Let the dhal cook until it's 3/4th done. Now throw in all the vegetables one by one, Hing ,cover it and cook. Grind the ingredients as listed above. Add the ground paste along with the kootu mixture and give it a stir.Make sure u cook in the medium flame. Add salt according to taste, do  not add while cooking the dhal. Cook for five to seven minutes, by the time everything will be cooked. Heat a small pan and add 2 tsp of oil, hop in the mustard seeds when it is hot . once splutters ,add curry leaves and urad dal. Give it a mix & throw this in our kootu.. Combine well. Switch off and serve.
