kadai vegetables

This is one recipe where u can add ur "not a big fan" veggie's and make them interesting. Basically, i am a great lover of veggie's ,all thanks to my late paatima who made those delicious side dishes which I swear no one can say no to it.
Ingredients :
Assorted veggie's -- 2 cup
Paneer -- 1/4 cup
Half&half/cream/whole milk/2% (ur choice) -- 1/4 to 1/2 cup (totally ur choice)
Turmeric powder-- 1/4 tsp
Red chilli powder-- 1/2 tsp
coriander powder-- 1 tsp
Salt -- as reqd.
Honey-- 1 tsp(optional)
Oil-- 4 tbsp
To be sautéed and grind :
Tomato(big) -- 1 no.
Onion (big)-- 1 no.
Garlic-- 4 clove
Ginger-- 1 inch
Cumin seeds-- 1tsp
Green chili -- 2
Cinnamon-- 1 inch
Cloves-- 2 no.
cardamom-- 1 no.

Method :
First we have to saute 2 cup of vegetables nice and crisp.(Do not saute paneer) Keep it aside. In the same pan pour 1 tsp of oil and saute the items given in the "To grind " table. Cool it for few minutes and grind it finely. Transfer the contents to the pan and drop in the turmeric powder,red chilli powder,coriander powder and saute until the raw smell goes,this may take 5 minutes. Add the sautéed veggie's,paneer and coat it evenly. Now add the milk of ur choice , honey and let them blend for few minutes. U've to add cream or half & half if u like the consistency to be creamy. I've added whole milk and I don't find any difference. It came out good. Switch off the flame when the veggie's reach the desired consistency..
