Puran Poli

After pregnancy without knowingly i've developed a sweet tooth for desserts. I'm trying to limit gobbling loads of sweets,chocolates etc . Unfortunately this is one stubborn habit that i'm not proud of.. U know what , it's really really hard resist eating sweets.. Atlast my cravings won the battle and so came the post  puran poli........
Ingredients :
For stuffing :
Channa dal /Bengal gram -- 1 cup
jaggery powdered -- 1 cup
Cardamom Powder -- a dash
For cover :
Wheat flour -- 1 cup
Maida -- 1 cup
Oil -- 2 tbsp
Ghee -- 1 tbsp
Salt -- 1/4 tsp
Method :
Soak the channa dal for half an hour. Take a big bowl and transfer both the flour and add ghee. Scald it well so that it gets coated everywhere. Add the salt too. Now add the water little by little and form a stiff dough. Apply on the sides and rest for an hour or so. Pressure cook the channa dal by adding little amount of water. Pressure cook for 5 minutes. when u open ,u would c all the dhals gone flat. In a small sauce pan add the powdered jaggery and add may be 1/2 cup of water. let the jaggery gets dissolved completely. Once it's done ,filter the syrup using a filter that ensures all the impurities  settled on the filter itself. Transfer the syrup back to the sauce pan again and boil. Dump the channa dal along with it's water into the syrup and cook. Close the lid and cook until  barely there's some water left. Do not make the stuffing too dry. There has to be some  moisture left and that yields a good poli. Switch off the stove and wait till it becomes warm. Now grind the entire mixture in a mixie /grinder . Now that it's grinded, u'll see a thick mass but still a moist one.

check the dough when it's time and start kneading it adding little bit of oil. Knead well and again rest for 10 minutes. Repeat the same process until u use the specified amount of oil.  Dough will be butter soft now. Divide the entire dough into equal parts. It's totally upto u like how u want ur poli, big or small, thick or thin.. Now start rolling using a rolling pin , roll may be 3 inch in dia.

 At the same time, make ur stuffing into medium big balls.  Now place the stuffing in the middle of the dough and cover it. U may get an idea when u see my pics. Flatten it using ur hand and then roll it according to the size u need.
Palce the rolled poli in a hot pan / dosa pan and apply little bit of ghee. U'll see some small bubbles on top of the poli. Flip it and cook ,now it will  puff up entirely. Transfer it and again apply ghee on the other side . Serve warm...
